Nutrition X sports nutritionist Danny Webber has created a meal for all of our vegan athletes out there. This delicious dish gives you a healthy hit of protein, carbs and fats perfect for that post training meal to aid your recovery.
Follow the simple steps bellow to give it a go!
All you need is…
- Tofu, raw, firm 300g
- Courgette 200g
- Mushrooms 128g
- Mixed peppers 160g
- Onions 75g
- Cajun spice mix 16g
- Slice the tofu to fit on the skewers and place in a polythene bag. Add cajun spices and gently mix well until fully covered (If the tofu is wet use paper towels to soak up any excess fluids).
- Slice the vegetables and thread them onto the skewers with the tofu then place onto a baking or grilling tray (If using wooden skewers soak in water before grilling).
- Grill the skewers on a high heat, turning often for approx 10 minutes or until the tofu is lightly brown.

Protein – 6.3g
Fat – 3.2g
