A recipe with a purpose - Nutrition X expert nutritionist Danny Webber has created a fantastic vegetarian salad option, providing our vegetarian athletes with an interesting lunch/dinner option that packs 17.4g of protein per serving!
- 1 Tbsp balsamic vinegar
- 1 small beetroot
- 40g of goats cheese
- 2 pinches of parsley
- 1 handful of rocket leaves
- 5 cherry tomatoes
- 25g walnuts
- 1 handful of watercress
- Chop the beetroot into cubes, break the walnuts and slice the tomatoes, mic together with the rocket and watercress.
- Finely slice the parsley and crumble the goats cheese and add to the salad, drizzle with balsamic vinegar.
