If you're giving Veganuary a try this month (or even if you're not, you won't want to miss these), we've got a protein-fuelled treat for you.

Ingredients:

  • 10 Medjool Dates
  • 1 cup Blueberries
  • 1 Cup Cashew nuts
  • 1 Lemon
  • 2 servings Pea+ Protein (Vanilla)

Method:

  1. In a blender blitz the nuts until a fine crumb texture is formed.
  2. Add the dates, pea+ protein powder and the zest of a whole lemon. Blitz again until it is all crumbed.
  3. Add the juice of the lemon until the crumbs start to stick together and form a dough. If you need a couple of tbsp of water to achieve this, add these one-by-one.
  4. Remove the dough from the blender and transfer to a mixing bowl. Add the blueberries to the bowl and use you hands to combine them into the dough. Then transfer the dough into a shallow 8'x8' lined tin and press into all the edges until you have a layer of the same thickness all over.
  5. Place the tin into the fridge for 1-2 hours until firm. Remove and cut into 6 bars. These can be wrapped individually of kept fresh in the fridge in a sealed box or bag for 3-4 days.
